Menu Plan 3/30-4/5



Well last week was my first time planning my weekly menu. I think it went well. There were two days that I did not cook. Fri. I ran errands and Sat. everybody was all over the place. Since those two meals didn't get made I will carry them over to this week. Again I am trying two new recipes this week. Now onto the menu:

Budget Round Up

Ok so it's been 5 weeks since I challenged myself to lower the grocery budget by $50 dollars. The plan is for that $50 to be used towards things we may need. So, how did I do? Well I did it and I am sooo proud of myself. That's $250 saved!!

Let me say that I think the biggest help was having my freezer stocked with meat. Especially since I don't expect the lowest price to come around for a few more weeks. Have I still bought some meat? Yes, when's it's a good sale. However, we mainly eat ground beef and chicken which are the meats I'm stocked up on.

Palmolive Pure & Clear Review

I was so excited to get to try this product. Unfortunatley there was a mailing problem and one of the samples got ruined. I thought well atleast there is one left. Little did I know I'd be wishing I had the other one. Yes there's a story here.

When my sample arrived I put it right by the sink so I'd remember to use it when I washed dished. See I don't normally wash dishes except the ones I use while cooking. It just so happened that that night I didn't cook. Which means the kids washed dishes and saw the cute little package there and thought "Look! It's something new and different. We must try this" (because they hadn't just opened a brand new bottle of dish soap!). I was sooo upset the next morning when I realized it was GONE! Did I mention my kids are soap hogs?

So, what did I do? I told the kid who used it that he gets to write the review. The only thing I can say is that it smells soooo good, it's a very clean scent.

I must apologize ahead of time as my son is taking a college english course and his writing is so clinical (blah!). Forgive me! However he has lots of experience in dish washing. Now, on to his review.


The sample of Palmolive Pure + Clear was very affective against tough stains and stuck on foods. As dishes with stuck on foods went through the water, I found it easier to scrub off the food than with previous dishwashing liquids. In addition, the Palmolive Pure + Clear left my hands feeling rejuvenated. Over all I would recommend this product to others as a beneficiary to any domestic kitchen.

Ranch Parmesan Chicken

If you've been following along you know that this week I am trying new recipes. I love trying new recipes but will be more inclined to try it based on reviews. Which is why I thought I would let you know how it turned out and how it tasted.

So, how did this recipe fare? 5 stars!! We all loved this dish, it was sooo good. I did make one change to the recipe in that I used Ritz crackers instead of bread crumbs since it was what I had on hand. Next time I will shorten the bake time as it was starting to burn around the edges, thankfully you couldn't taste it.

I will be adding this to my Freezer Menu! For those of you who want to give this recipe a try here it is:

Ranch Parmesan Chicken

Ingredients:
6 boneless skinless chicken breasts
1 cup dry breadcrumbs (you can also use gluten-free)
1/4-1/3 cup Parmesan cheese
1 teaspoon seasoning salt
1/2-1 teaspoon ground black pepper
1/2-1 teaspoon garlic powder
1 cup prepared ranch salad dressing (use bottled salad dressing, you might need a bit more dressing)

Directions:
1. In a zip-loc plastic bag, marinade chicken breasts in ranch dressing for at least half an hour
2. Preheat oven to 400° degrees (set oven rack to lowest position)
3. Lightly grease a 13 x 9-inch baking dish
4. In a shallow bowl mix together the dry breadcrumbs with Parmesan cheese, seasoned salt, black pepper and garlic powder
5. Remove chicken from marinade, allowing any excess to drip off
6. Coat in the breadcrumb mixture
7. Place in a single layer onto a greased baking sheet or line with non-stick foil (do NOT bake in a smaller baking dish or the bottom of the chicken will be soggy)
8. If desired you can sprinkle black pepper over the chicken pieces
9. Bake uncovered for about 30-35 minutes or until the chicken is cooked)

Menu Plan Monday



It seems I've been in a dinner slump of sorts. My hubby even teased me today by asking if I remembered how to cook since it had been a while. I was like that's not true I cooked on....yeah, I couldn't remember. However it did come to me and Thursday was the last day I had cooked.

I began to think that what I needed was to try some new recipes. Ya know liven things up a bit. Which means I needed to plan my menus and write out my grocery list for the week. So, here's what I've come up with (the Gravy Baked Pork Chops I have made before, yummy!):

Mon.- Ranch Parmesan Chicken, Rice-a-Roni, salad & apple slices

Tues.- Doritos Casserole, corn, salad & orange slices

Wens.- Round Steak Casserole, mashed potatoes, green beans & apple slices

Thurs.- King Ranch Chicken, Rice-a-Roni, & Texas Toast

Fri.- Bacon Cheeseburger Rice, Garlic Roasted Vegetables & cantaloupe slices

Sat.- Gravy Baked Pork Chops, rice, & corn

Sun.- Eat out!!

Of course I plan to stick with what's on the menu, but I may change what I make on what day. You just never know what you may "feel" like. Also sides are so hard to pin down!

Notebook Experiment-Triple Chocolate Brownies



While doing some blog reading I came across Amy's Notebook Experiments and decided I wanted to do one. I chose to make the Triple Chocolate Brownies in her 2/25/09 entry. This should come as no surprise since I enjoy baking and do it quite often.

The reasons I chose to make the brownies was due to their simplicity and chocolatness (uhm, is that a word?). After making them I can tell you that yes they were easy to make except for that mixing part, OMG! It was sooo thick next time I'll make hubby do it. Now for the chocolaty part, ooh baby talk about chocolate bliss!

Oh and another thing I used different ingredients. I know I just can't help myself sometimes. Since I'm confessing I didn't dust them with sugar either I forgot. Alright, alright and so maybe I couldn't wait to taste them. Geesh!

Hungry Jack Casserole-4 for $5 Dinner Challenge

My family liked this dish so I will be making it again and next time I will leave out the brown sugar, since it tends to be on the sweet side. I seasoned my ground meat with salt, pepper, garlic & onion powder. I also halved my biscuits and put half on the bottom spreading them out and pushing them up the sides of the pan. Baked for 5 minutes. then added filling, cheese and remaining biscuits.

Cost breakdown:

Hungry Jack Casserole

1 lb ground beef
1 teaspoon salt
16 ounces pork & beans
3/4 cup barbecue sauce
2 tablespoons brown sugar
1 tablespoon instant minced onion
6-9 hungry jack flaky biscuits
1 cup shredded cheddar cheese

Preheat oven to 375 degrees. Brown ground beef and strain. Add next 5 ingredients and heat til bubbly. Pour into 2 quart casserole dish. Peel biscuits in half and lay across top. Sprinkle with cheese. Bake for 25-30 minutes.

4 for $5 Dinner Challenge

I don't know about anyone else but I feel like we can cut our grocery budget down some. I've already lowered by $50 a week, but feel like I can lower it another $50. I have come to realize that the biggest expense is meat.

Well I started reading to see how others are handling there meals on a budget. What I found was that we are eating way to much, portion wise. So, I've decided to cut it down, my family has begrudgingly decided to go along just "to see first".

To go along with cutting the grocery budget I want to see if I can make dinner for $5 or less. I am expecting to go over sometimes cause $5 seems like so little, however I just may surprise myself. I will be sharing my dinner challenge with you all. To start with I'll post at least one recipe a week and will share my results for that week.
